After my long day of civic duty (or duties, as it were – more on that tomorrow) I decided to treat myself to a tasty dinner. Truth be told, I bought the ingredients three days ago and needed to use them before they begin to go all zombie on me. Here’s the list:
1 Pot Roast
2 Carrots (full, organic, booyah)
4 white potatoes
2 cans Campbell’s Cream of Mushroom soup
1 can Ralph’s Beef Broth
1 2 Liter Diet Coke (not pictured)
1 Crock Pot
1 750ml bottle Evan Williams (not used for cooking, for drinking purposes only):
I began by cutting hearty slices out of the carrots and then cubing (for lack of a better term) the potatoes, which gave me this:
I also made my first drink at that time, pouring into my favorite 32 oz. plastic tumbler:
I then placed the roast in the Crock Pot and emptied both soup cans as well as the broth into said pot. I scooped the potatoes and carrots into the mixture and gave it a good stir, flipping the meat around (haha) as I stirred the mixture (again, haha). Here’s what it looked like before I fired it up:
NOTE: Under normal circumstances I would have elected to do a slow burn, cooking it on low for eight hours or so. Today being what it was, coupled with the fact that the roast was about to turn into the head meat from that scene in Poltergeist where that dude rips his own face off, I elected to do the cooking on high, cutting the time in half.
As mentioned in the ingredient list, I decided to enjoy a fair amount of whiskey while cooking. Since cooking took a fair amount of time I drank my fair share of said whiskey:
About four hours after putting everything into the Crock Pot I received a text message from a lady friend of mine asking what I was doing. When I regaled her with the tale of my pot roast escapades she asked why I never cook dinner for her. Well guess what, babe? Big Skeezy was on his way, with this in tow:
The lady in question is not a big meat fan (keep your jokes to yourself) but she LOVED my meat (again, keep your jokes to yourself). The recipe I have now given to all of you has proven itself to be invaluable. It’s quick, it’s easy, the prep time is about 10 minutes (generously) and the ladies love it.
